If you have watched a pour over being made in a speciality coffee shop, you have probably noticed the barista pour a small amount of water over the grounds and then wait, watching as the coffee swells up into a dome of bubbles and then slowly subsides. That is the bloom. It looks a bit theatrical, and you might wonder whether it makes any actual difference or whether it is just a ritual for the sake of appearing knowledgeable. It turns out there is real science behind it and it does genuinely affect the quality of the extraction.
Understanding the bloom also tells you something interesting about the freshness of your coffee. A vigorous bloom means very fresh beans. A flat, unresponsive bloom means the coffee is older and has already lost much of its CO2 in the bag. The bloom is not just a technique: it is also a freshness test.
The Science: Why Coffee Releases CO2
During the roasting process, coffee undergoes the Maillard reaction and caramelisation, producing a range of aromatic compounds and releasing significant quantities of carbon dioxide. This CO2 is trapped inside the cells of the roasted bean. Immediately after roasting, beans are actively off gassing as the CO2 slowly escapes over days and weeks. This is why most good quality coffee bags have a one way valve: to let the CO2 out without letting oxygen in.
When you grind coffee, you dramatically increase the surface area of the beans, accelerating the rate at which CO2 escapes. Freshly ground coffee off gases very actively. When you add hot water to freshly ground coffee, the water heats the remaining CO2 inside the particles and causes it to escape rapidly. You see this as bubbles and as the grounds swelling up into that characteristic dome or bloom shape.
The problem for extraction is that this escaping CO2 creates a barrier between the water and the coffee particles. If you simply pour all your brew water over very fresh coffee at once, the CO2 rushing out interferes with the water's ability to saturate and extract the grounds evenly. Parts of the coffee bed will be over extracted and parts under extracted.
How the Bloom Improves Your Cup
By giving the coffee a short pre infusion with a small amount of water and then waiting, you allow the bulk of the CO2 to escape before you begin the main pour. Once the CO2 has dissipated, the water can saturate the coffee evenly and extract consistently from all the grounds.
The practical difference in the cup is a more even, balanced extraction. You get better clarity of flavour, sweeter extraction of the sugars and a cleaner finish. The effect is most noticeable with very fresh coffee (within 7 to 10 days of roasting), where the CO2 is most active. With coffee that has been sitting in your cupboard for three weeks, the bloom may be subtle and the difference in the cup correspondingly smaller.
One interesting note: there is a trade off. Very fresh coffee, bloomed properly, often tastes excellent. But coffee that is literally one to three days off the roaster can sometimes taste flat or underdeveloped even with a good bloom, because the very high CO2 content interferes with extraction even with pre infusion. Many experienced home brewers find coffee hits its peak between 7 and 21 days post roast, when CO2 levels are high enough to produce a good bloom but low enough not to disrupt extraction.
How to Bloom Correctly for Pour Over
The technique is simple. After placing your rinsed filter and ground coffee in the dripper, set the whole thing on a scale and zero it out. Start your timer. Pour in hot water (around 93 to 95 degrees Celsius) equal to roughly twice the weight of your coffee dose: 15 grams of coffee gets 30 grams of water, 20 grams gets 40 grams, and so on. Pour slowly in a circular motion to ensure all the grounds are wetted.
Then wait. Watch the grounds swell and bloom. For very fresh coffee, the dome will be impressive. For older coffee, it may barely rise at all. After 30 to 45 seconds, you will notice the activity subsides: the CO2 has largely escaped and the grounds settle slightly. This is your cue to continue pouring the rest of your brew water.
Bloom for AeroPress and Other Methods
The bloom step is most important for pour over brewing because the continuous flow of water means CO2 interference has the most impact. For AeroPress, a short bloom of 20 to 30 seconds before adding the remaining water is still beneficial and easy to incorporate: pour in your initial small amount of water, swirl gently to ensure saturation, wait, then add the rest of your water.
For French press, the bloom is less critical because immersion brewing is inherently more forgiving of CO2 interference. That said, a short pre infusion still helps with even saturation of the grounds. Add a small amount of water, stir gently to ensure everything is wet, wait 20 to 30 seconds, then add the rest of your water.
Drip filter machines cannot bloom unless they have a pre infusion or bloom setting (some higher end machines like the Moccamaster have this). If your machine lacks this, you can manually pre wet the grounds before placing the basket in the machine, though this adds a step that many people find impractical for everyday brewing.
The Bloom as a Freshness Indicator
This is worth repeating because it is genuinely useful. Next time you brew pour over or AeroPress, pay attention to how your coffee blooms. A vigorous, billowing dome is a good sign: your coffee is fresh and full of CO2. A flat, barely responsive bloom is a signal that your beans are getting old and their best flavours are already beginning to fade. If you see this consistently, it might be time to buy smaller quantities more frequently or store your coffee more carefully.
